Kansas City-based Tiki Taco is concluding a year of significant expansion as it prepares for a major push into the Kansas City suburbs in 2026.
The companywill open at least two new locations next year, with signed leases for sites in Liberty, Mo., and the Metro North area. The announcement follows a 2025 campaign that saw the brand expand its footprint into Olathe and Shawnee and secure high-profile partnerships with University of Kansas Athletics.
“2025 was a huge year for Tiki Taco — not just because we opened new locations, but because more neighborhoods chose to make us part of their day,” Eric Knott, CEO of Tiki Taco, said in a company press release.
The upcoming expansion includes a new storefront at 9711 N. Ash Ave. in Liberty and another at the intersection of Northwest Barry Road and Northwest Jefferson Avenue. Company officials stated that an additional two to three locations are currently in development as part of a strategy to scale the brand’s footprint across the region.
The brand’s 2025 growth was marked by its entry into major athletic venues, serving fans inside KU’s David Booth Kansas Memorial Stadium and Allen Fieldhouse. The company also increased its visibility through pop-up activations with major regional employers and healthcare providers, including Garmin, Honeywell and Children’s Mercy Hospital.
Jason Kinslow, director of operations, said the company has focused on internal infrastructure to prepare for the 2026 surge.
“We’ve invested in the tools and training to support our team, and we’re ready to scale that same consistency and culture,” Kinslow said in the release.
Founded in Kansas City, Tiki Taco operates five locations and a food truck.
