Jersey Mike’s Subs has named restaurant industry veteran Stacy Peterson as its president and chief operating officer. She previously served as CEO of Jeni’s Splendid Ice Creams and spent a decade at Wingstop, where she was chief revenue and technology officer.
“I am proud to welcome Stacy to the Jersey Mike’s leadership team,” Jersey Mike’s CEO Charlie Morrison said in a company press release. “Stacey was a key player in the growth and success of Wingstop when we partnered together there, and I look forward to bringing her expertise in digital, marketing and operations to Jersey Mike’s to accelerate our growth.”
Peterson’s appointment comes as the company continues a rapid expansion, now operating over 3,000 locations globally. She joins at a “moment in its growth journey,” Peterson said, adding that she looks forward to “driving innovation” and “strengthening our best-in-class operations.”
Jersey Mike’s, founded in 1956, also recently completed its 15th Annual Month of Giving, raising a record-breaking $30 million for local charities.
