UK: The Michelin-starred restaurant from chef Merlin Labron-Johnson, Osip, has expanded from fine dining to overnight stays with the launch of The Rooms at Osip.

Before relocating to outside Bruton in Somerset, Osip was formerly housed at the boutique hotel Number One Bruton.

The restaurant has now added four bedrooms to its offer, designed by the creative director of Smith & Willis, Johnny Smith. All rooms feature exposed beams, oak flooring and neutral décor, while the two duplex rooms include a freestanding bath tub.

Osip has also partnered with The Odd Company, a provider of handmade, luxury mattresses. Managing director Andrew Seed said: “Everything we do at The Odd Company is rooted in craftsmanship, quality materials, and an eye for detail. These are values that mirror Merlin’s approach at Osip. That shared focus on quality made this partnership feel like a natural fit.”

Labron-Johnson said: “With The Rooms at Osip, we set out to create a retreat that blends natural beauty with understated comfort. Every element was carefully chosen — from the handcrafted finishes to the locally made furniture — to help guests pause, breathe, and unwind. Collaborating with partners like The Odd Company, who share this philosophy, was essential.”

The Rooms at Osip are now open for booking and are priced from £300 per night, including breakfast.

Osip’s expansion reflects a wider trend in hospitality, as acclaimed restaurants increasingly blur the line between dining and accommodation. Dishoom for instance opened its first guest rooms above its Notting Hill restaurant, called Permit Room Lodgings, last month.
